Frog legs taste like a delicate cross between chicken wings and white fish — tender, slightly sweet, with a fine texture closer to sole than to poultry. The flavor itself is mild, which is why the preparation matters so much: garlic and parsley butter (persillade) is the classic for a reason.

The texture surprise
