Paris has a dirty secret : for the city of nightlife, its kitchens close embarrassingly early. By 10:30pm most chefs are gone — unless you know the night-owl addresses.

The midnight tradition

Onion soup at midnight is a Parisian institution born at the old Les Halles market — and it survives where the night never stopped : at Roger la Grenouille, kitchen runs until midnight Thursday through Saturday, an inheritance from Saint-Germain's golden nightlife years.

The post-show plan

Theater at l'Odéon, a concert at Saint-Michel, jazz at the Huchette caves — all within five walking minutes. Then : real French onion soup, frog legs if the night deserves it, and a glass from the 300-reference cellar.
